Preheat Over to 350 degrees.
 
Mix in an electric mixer until light and creamy:
    2 sticks butter - at room temperature
    1 1/4 cup raw sugar
Add then mix until blended:
    2 large eggs
    1 teaspoon pure vanilla extract
Add then mix until blended:
    3/4 cup rice flour
    3/4 cup tapioca starch
    3/4 cup of potato starch four
    1 teaspoon sea salt
    1 teaspoon baking soda
Add them mix until blended:
    2 cups chocolate chips (gluten-free).
    1 cup chopped walnuts (optional)
   
Drop by teaspoon onto ungreased baking sheet.
Bake 9 to 11 minutes
Cool slightly then remove to rack

 

Ingredient Alternatives:

Replace the 2 eggs with Egg Replacer - (follow directions on package).

Replace the flour mixture with another gluten free flour. This is particularly important if you are allergic to potato or wish to avoid night shades.

Replace raw sugar with half raw sugar and half organic brown sugar, OR use half regular sugar and half regular brown sugar.

Replace part or all of the chocolate chips with white chocolate.

Replace walnuts with other nut such as macadamia nuts.
